NTR 311 - Institutional Food Management (3-0-3) (Prerequisite: BSN 101 or NTR 209 ) This course covers management principles and their application to food systems. Topics such as food and non-food procurement and purchasing; financial planning and budgeting; layout and equipment; food delivery systems; and quality assurance are discussed. Both commercial and non-commercial applications of food service operations are studied.
