NTR 200 - Nutrition Concepts and Controversies

This course provides the student with a foundation in the science of nutrition and the knowledge necessary to separate fact from misleading nutrition claims. The research from peer reviewed journals and government agencies which support direct and indirect links between nutrition and disease is examined. National nutrition standards and guidelines are used to explain the concepts of nutrient density and discretionary calorie allowance and identify how each may be used in diet planning. In addition, current controversial issues are discussed along with the validity of nutrition-related claims.
