MNTR 501 - Nutritional Concepts & Nutritional Analysis (4 cr.) Prerequisite: Graduate Standing This course is intended to provide an advance overview of nutritional concepts and nutrients analysis. The relationship between carbohydrates, amino acids, and fatty acids metabolism will be discussed. Water, electrolytes and acid base balance will be reviewed. Biochemical, physiological and functional aspects of nutrient metabolism and utilization are explored. Mechanisms through which macronutrients meet human biological needs are emphasized, as well as understanding of concepts of menu planning and nutrients analysis. Students will develop their critical thinking skills by using learned concepts in assessing their own nutritional status and determining their nutritional needs and finally to formulating nutritional plan/intervention to meet their own nutritional needs.
